Vegetarianism Made Easy Pt. 2

Not sold on vegetarianism yet? Try this tasty vegan/vegetarian pudding! As a vegetarian, I often have trouble finding ways to get enough protein in my diet. While I have found many delicious plant-based meat substitutes that I love, I know they are not tantalizing to everyone’s taste buds. This pudding, however, is an alternative, quick, delicious, and easy source of protein.

This recipe consists of 1 cup of oat milk (or another plant-based milk), ⅔ cup of oats, 2 tablespoons of chia seeds, 2 tablespoons of cocoa powder, 3 tablespoons of maple syrup or honey, 1 teaspoon of vanilla extract, 2 dates, and a pinch of salt. Toss the ingredients into a blender or food processor and blend until the ingredients are incorporated. To top it off, I sprinkle on a few chocolate chips. This pudding serves a dual purpose: it is both a speedy and simple breakfast and a delectable dessert. I personally do not love the slimy texture of traditional chia seed puddings, so this is a great way to add in chia seeds, a protein-rich element.


While making this pudding, I have tweaked a couple of the ingredients to my liking, so feel free to add or take out anything as needed. I hope you enjoy this recipe and cross my fingers that you are one step closer to becoming a vegetarian!
