Ra Ra Ramen!

Do you ever get tired of the same old boring ramen from the grocery store? Do you want to spice it up (both figuratively and literally)? I know I do! Well, I have one last vegetarian recipe to finish up the year: fancy ramen! As a vegetarian, I find it very hard to find instant ramen packets that are both vegetarian and tasty, so this recipe is the perfect one to use to replace the flavor packets.


Start off by boiling your ramen noodles to your preference. I often leave them a little undercooked as the noodles will cook more later in the sauce. Once your noodles are to your liking, drain the water and set them aside. Then, add 1 tablespoon of butter, 1 minced garlic clove, and 2 tablespoons of soy sauce in a pan on medium heat and stir until the butter melts. Add 1 tablespoon of brown sugar and 1 teaspoon of red pepper flakes. Once the sauce has thickened, stir in the noodles. This next step is optional, but I often crack an egg in the pan on the side, let it cook for 30 seconds, then scramble and incorporate it into the noodles. The final touch is to sprinkle some sesame seeds and chopped scallions on the top. I often add some more red pepper flakes for a spicier taste.


This is one of my favorite, quick 10-minute meals that I can easily prepare after a long night at dance. It is simple yet a huge upgrade from the flavor packets because of the depth in the flavors. I hope you enjoy this final recipe and this collection of my journey through vegetarianism!
